Here is a quick easy recipe to help you pass the time while on the computer….or pack in your lunch….


3 cups large flake oatmeal (not instant)

1 cup dried cranberries

1 cup chocolate chips

Mix together in a large steel bowl (or a heat proof bowl)


In larger sauce pan, on low heat, stir until smooth

3 cups peanut butter

1 tbsp coconut oil **optional**

2/3 cup liquid honey

Remove from heat and pour over oatmeal mixture.  Stir until well combined and pour into a parchment paper lined pan (I use a 9 X 11 as we like a bit thicker square)

Smooth out top and place in fridge to let set (usually overnight) …  Cut into whatever size bars you like and enjoy
